Description

A refreshing and creamy pasta salad with cranberries and feta.


Ingredients

  • 12 oz rigatoni pasta
  • 1 cup cranberries
  • 1 cup feta cheese, crumbled
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook rigatoni according to package instructions. Drain and let cool.
  2. In a bowl, mix mayonnaise, Greek yogurt, lemon juice, and olive oil.
  3. Add cranberries and feta to the cooled pasta.
  4. Pour the dressing over the pasta salad and mix well.
  5. Season with salt and pepper.
  6. Chill in the refrigerator for at least 30 minutes before serving.
