Description
A refreshing and creamy pasta salad with cranberries and feta.
Ingredients

- 12 oz rigatoni pasta
- 1 cup cranberries
- 1 cup feta cheese, crumbled
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook rigatoni according to package instructions. Drain and let cool.
- In a bowl, mix mayonnaise, Greek yogurt, lemon juice, and olive oil.
- Add cranberries and feta to the cooled pasta.
- Pour the dressing over the pasta salad and mix well.
- Season with salt and pepper.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Use fresh cranberries for a tart flavor.
- Substitute Greek yogurt with sour cream if desired.
- This salad can be made a day in advance.
