Instructions
- In a pot, bring salted water to a boil and cook the orzo according to package instructions.
- In a separate pan, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in the vegetable broth and bring to a simmer.
- Add cottage cheese and Parmesan cheese to the broth, stirring until smooth.
- Drain the orzo and add it to the cheese mixture.
- Mix well and season with salt and pepper.
- Garnish with fresh parsley before serving.
