Creamy Chicken and Spinach Casserole is a delicious and comforting dish that combines tender chicken with a rich cream cheese and spinach mixture, topped with melted mozzarella.

- 2 large boneless, skinless chicken breasts
- 2 tbsp olive oil, divided
- 3 cloves garlic, minced
- 1 tbsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- 2 cups fresh spinach
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella cheese, divided
- ½ cup Parmesan cheese (optional)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
- Slice chicken breasts horizontally into 4 cutlets and pound to even thickness.
- Mix 1 tbsp olive oil, garlic, Italian seasoning, salt, and pepper. Toss chicken to coat and refrigerate 15–30 minutes.
- Heat remaining olive oil in a skillet over medium heat. Sauté spinach until wilted (2–3 minutes). Set aside.
- In a bowl, beat cream cheese until smooth. Mix in spinach, ½ cup mozzarella, and Parmesan (if using).
- Arrange chicken in the baking dish (optionally sear 1–2 minutes per side first).
- Spread spinach–cream cheese mixture over chicken and top with remaining mozzarella.
- Bake 20–30 minutes, until chicken is cooked through and cheese is melted and lightly golden. Rest 5 minutes before serving.
Notes
- Chicken cutlets save prep time and cook evenly.
- If using frozen spinach, thaw and squeeze out excess moisture to avoid a watery dish.
