Creamy Broccoli Pasta made in one pot for easy cooking and clean-up.
Ingredients

- 4 tablespoons butter
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1¼ cups half and half
- ½ lb medium pasta shells
- ¼ teaspoon each: onion powder, dried thyme, salt
- ½ teaspoon each: dried oregano, dried parsley
- 3½ cups broccoli florets, uncooked
- 2 teaspoons lemon juice
- ¾ cup Parmesan cheese, finely grated
Instructions
- Measure everything before starting. Cut broccoli into smaller pieces for faster cooking.
- Melt butter in a large skillet over medium heat. Add garlic and cook for 1 minute.
- Stir in chicken broth, half and half, and all seasonings.
- Bring liquid to a boil. Add pasta and submerge it fully. Partially cover and cook per package instructions. Add broccoli during the last 6 minutes. Stir occasionally to prevent sticking.
- Remove from heat. Add lemon juice and gently fold in Parmesan cheese with a silicone spatula. The sauce will thicken as it cools.
- Garnish with parsley. Serve with garlic bread with cheese.
Notes
- Grate Parmesan from a block for best melting and flavor; pre-shredded cheese can result in a grainy texture.
- A combination of Parmesan, Asiago, and Romano works well.
- Avoid adding cheese to a super hot sauce to prevent separation.
- Similar pasta shapes (e.g., fusilli, farfalle) can be substituted.
- Add cooked chicken or sausage for a heartier dish.
- Refrigerate in an airtight container for up to 3 days.
- Freeze for up to 3 months. Reheat in the microwave; the sauce may thicken slightly.
