- 2 cups all-purpose flour
- 1 cup fresh cranberries
- 1/2 cup chopped walnuts
- 1/2 cup sugar
- 1/2 cup orange juice
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix flour, sugar, baking soda, baking powder, and salt.
- In another bowl, whisk together orange juice, melted butter, and eggs.
- Combine wet and dry ingredients. Stir in cranberries and walnuts.
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack.
Notes
- Store in an airtight container for up to a week.
- Can be frozen for up to 3 months.
- Use chopped pecans instead of walnuts if preferred.
