Description

Ingredients

  • 1 1/2 cups (180 g) graham cracker crumbs
  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (115 g) unsalted butter, melted
  • 1/4 teaspoon salt
  • 16 oz (450 g) cream cheese, softened
  • 2/3 cup (130 g) granulated sugar
  • 2 large eggs
  • 2 teaspoons orange zest (from 1 orange)
  • 1/4 cup (60 ml) fresh orange juice
  • 1 teaspoon vanilla extract
  • 1/4 cup (60 ml) sour cream
  • 1 1/2 cups (150 g) fresh or frozen cranberries
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (60 ml) water
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest

Instructions

  1. Preheat your oven to 325°F (160°C). Line a 9×9-inch (23×23 cm) baking pan with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, salt, and melted butter. Press into the baking pan and bake for 10 minutes. Let cool slightly.
  3. In a separate bowl, beat the cream cheese with 2/3 cup granulated sugar until smooth. Add eggs one at a time, mixing well. Gently mix in orange zest, fresh orange juice, vanilla extract, and sour cream. Pour over the cooled crust.
  4. Bake for 30–35 minutes until the center is just set. Let cool to room temperature, then refrigerate for at least 2 hours.
  5. In a saucepan, combine cranberries, 1/2 cup granulated sugar, water, 1 tablespoon orange juice, and 1 teaspoon orange zest. Simmer, stirring, until cranberries burst and mixture thickens, about 8–10 minutes. Let cool completely.
  6. Spread the cooled cranberry topping over the chilled cheesecake. Use parchment paper to lift the cheesecake from the pan. Cut into squares and serve.
