Description
A delicious cranberry orange cheesecake with a creamy filling and a tart cranberry topping.

- 1 1/2 cups (180 g) graham cracker crumbs
- 1/4 cup (50 g) granulated sugar
- 1/2 cup (115 g) unsalted butter, melted
- 1/4 teaspoon salt
- 16 oz (450 g) cream cheese, softened
- 2/3 cup (130 g) granulated sugar
- 2 large eggs
- 2 teaspoons orange zest (from 1 orange)
- 1/4 cup (60 ml) fresh orange juice
- 1 teaspoon vanilla extract
- 1/4 cup (60 ml) sour cream
- 1 1/2 cups (150 g) fresh or frozen cranberries
- 1/2 cup (100 g) granulated sugar
- 1/4 cup (60 ml) water
- 1 tablespoon orange juice
- 1 teaspoon orange zest
Instructions
- Preheat your oven to 325°F (160°C). Line a 9×9-inch (23×23 cm) baking pan with parchment paper.
- In a mixing bowl, combine graham cracker crumbs, 1/4 cup granulated sugar, salt, and melted butter. Press into the baking pan and bake for 10 minutes. Let cool slightly.
- In a separate bowl, beat the cream cheese with 2/3 cup granulated sugar until smooth. Add eggs one at a time, mixing well. Gently mix in orange zest, fresh orange juice, vanilla extract, and sour cream. Pour over the cooled crust.
- Bake for 30–35 minutes until the center is just set. Let cool to room temperature, then refrigerate for at least 2 hours.
- In a saucepan, combine cranberries, 1/2 cup granulated sugar, water, 1 tablespoon orange juice, and 1 teaspoon orange zest. Simmer, stirring, until cranberries burst and mixture thickens, about 8–10 minutes. Let cool completely.
- Spread the cooled cranberry topping over the chilled cheesecake. Use parchment paper to lift the cheesecake from the pan. Cut into squares and serve.
