Ingredients

- 1 cup wild rice
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 cup spinach, chopped
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Rinse wild rice under cold water.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic and cook for 1 minute.
- Add wild rice, vegetable broth, and thyme; bring to a boil.
- Reduce heat and simmer for 40-50 minutes until rice is tender.
- Add mushrooms and spinach; cook for an additional 5-10 minutes.
- Season with salt and pepper before serving.
