Instructions

  1. Rinse wild rice under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery; sauté until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Add wild rice, vegetable broth, and thyme; bring to a boil.
  6. Reduce heat and simmer for 40-50 minutes until rice is tender.
  7. Add mushrooms and spinach; cook for an additional 5-10 minutes.
  8. Season with salt and pepper before serving.
