Description

This is a copycat recipe for Dave’s Killer Bread, a nutritious and delicious whole grain bread.


Ingredients

Scale
  • 2 1/4 teaspoons instant yeast
  • 1 tablespoon molasses
  • 2 tablespoons honey
  • 2 cups warm water
  • 3 1/4 cups whole wheat flour
  • 1/4 cup amaranth flour
  • 1/4 cup spelt flour
  • 1/4 cup kamut flour
  • 1 1/2 teaspoons salt
  • 1 tablespoon ground flax seed
  • 2 teaspoons dry unsalted pumpkin seeds
  • 1 teaspoon black sesame seeds
  • 1 teaspoon sesame seeds
  • 1 tablespoon quinoa
  • 1 tablespoon wheat germ
  • 2 teaspoons dry unsalted sunflower seeds
  • 2 tablespoons old fashioned rolled oats

Instructions

  1. Add yeast to the stand mixer bowl and warm water. Let sit for 3-5 minutes until activated and foamy.
  2. Mix flours and salt in a large bowl.
  3. In a separate bowl, mix seeds, quinoa, wheat germ, and oats.
  4. Add honey and molasses, mix, and let sit for one minute.
  5. Slowly add flours and salt. Mix on medium until a sticky dough forms. Add seeds and mix until incorporated.
  6. Remove dough from mixer. On a lightly floured surface, knead for at least 15 minutes until dough softens.
  7. Conduct the windowpane test to check gluten activation.
  8. Add dough to a lightly oiled bowl, cover with plastic wrap, and let rise until doubled – about an hour.
  9. Preheat oven to 425 degrees and grease a 9 X 5 loaf pan.
  10. Punch down the dough, flatten, fold in sides, and roll into a log. Place in loaf pan, seam side down.
  11. Cover the pan with plastic and let rise again for 30-45 minutes.
  12. Bake for 35-45 minutes until golden brown and hollow when tapped.
  13. Let cool for at least 30 minutes before slicing.

Notes

  • Use a granite or marble surface for kneading.
  • Do not add too much flour while kneading.
  • For best results, use a plastic bag to allow dough to rise over the pan.
