A refreshing cold cucumber chicken salad perfect for warm days.
Ingredients

- ¾ cup mayonnaise
- 1 tablespoon white wine vinegar
- 1 clove garlic, minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 cups cooked chicken breast, shredded or cubed
- 1 large cucumber, diced
- ½ cup red bell pepper, finely diced
- ¼ cup red onion, finely diced
Instructions
- In a small bowl, whisk together mayonnaise, white wine vinegar, minced garlic, salt, and pepper until smooth.
- In a large bowl, add the chicken and pour the dressing over it. Gently fold in the cucumber, red bell pepper, and red onion until evenly coated.
- Cover and refrigerate for at least 30 minutes to let the flavors meld.
- Optional: top with fresh parsley or dill, and serve with a lemon wedge. Delicious on a croissant, over lettuce, or on its own.
