A refreshing cold cucumber chicken salad perfect for warm days.


Ingredients

  • ¾ cup mayonnaise
  • 1 tablespoon white wine vinegar
  • 1 clove garlic, minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked chicken breast, shredded or cubed
  • 1 large cucumber, diced
  • ½ cup red bell pepper, finely diced
  • ¼ cup red onion, finely diced

Instructions

  1. In a small bowl, whisk together mayonnaise, white wine vinegar, minced garlic, salt, and pepper until smooth.
  2. In a large bowl, add the chicken and pour the dressing over it. Gently fold in the cucumber, red bell pepper, and red onion until evenly coated.
  3. Cover and refrigerate for at least 30 minutes to let the flavors meld.
  4. Optional: top with fresh parsley or dill, and serve with a lemon wedge. Delicious on a croissant, over lettuce, or on its own.
