Description

A rich and moist coffee chocolate cake layered with coffee buttercream.


Ingredients

Scale
  • 360 g black coffee
  • 360 g all-purpose flour
  • 2 tbsp cornstarch
  • 300 g granulated sugar
  • 150 g dark brown sugar
  • 75 g unsweetened Dutch-process cocoa powder
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 1½ tsp salt
  • 165 g vegetable oil
  • 270 g sour cream, room temperature
  • 3 large eggs, room temperature
  • 3 tsp vanilla extract
  • 400 g butter, room temperature
  • 660 g powdered sugar, sifted
  • 2 tsp vanilla extract
  • 2 tbsp black coffee, cooled to room temperature
  • 1 tbsp instant espresso powder (optional)

Instructions

  1. Preheat the oven to 170°C (340°F). Line 3 × 20 cm (8-inch) round cake pans with parchment paper.
  2. Prepare the coffee and weigh 360 g. Set aside to cool slightly.
  3. Sift together all dry ingredients in a large bowl.
  4. In a separate bowl, whisk together all wet ingredients, including the coffee.
  5. Slowly pour the wet mixture into the dry ingredients, stirring gently until smooth.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 28–30 minutes, until a cake tester comes out clean.
  8. Cool cakes in pans for 5 minutes, then remove and cool completely on a wire rack.
  9. Mix the cooled coffee with instant espresso powder in a small bowl.
  10. Beat the butter for 4 minutes, scrape down, and mix for another 2 minutes.
  11. Add powdered sugar, vanilla extract, and coffee mixture in two additions, mixing well.
  12. Scrape down the bowl and mix for a final 2 minutes until smooth.
  13. Level the tops of the cooled cake layers if needed.
  14. Assemble the cake by layering the buttercream between the cake layers and frosting the outside.
