- 1 cup all-purpose flour
- ½ cup shredded coconut
- ½ cup sugar
- ¼ cup brown sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract

- ½ teaspoon baking soda
- ½ teaspoon salt
- Zest of 1 lime
- Juice of 1 lime
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, mix together the grated zucchini, sugars, and oil until well combined.
- Add the eggs and vanilla extract, mixing until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, shredded coconut, lime zest, and lime juice.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars and serving.
