Description
A sweet and crunchy snack mix made with Rice Chex cereal, butter, brown sugar, and cinnamon.

- 8 cups Rice Chex cereal
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- Preheat the oven to 275°F (135°C). Line a large baking sheet with parchment paper.
- In a small bowl, mix the granulated sugar and cinnamon. Set aside.
- Melt the butter in a microwave-safe glass measuring cup. Add the brown sugar, stir well, then microwave for another 20–30 seconds until the sugar dissolves (do not let it boil). Whisk until smooth.
- Place the Rice Chex cereal in a large bowl and drizzle the butter–sugar mixture over it. Gently stir until evenly coated.
- Spread the cereal onto the prepared baking sheet and sprinkle evenly with the cinnamon sugar mixture.
- Bake for about 45 minutes, stirring every 15 minutes.
- Remove from the oven and let cool slightly before serving.
Notes
- Stirring regularly helps prevent burning and ensures even coating.
- Let the mix cool completely to become crisp.
- Store in an airtight container for up to 1 week.
