Description
Cinnamon Roll Protein Crepes offer a delicious and healthy twist on traditional crepes, filled with a creamy yogurt mixture and topped with a sugar-free cinnamon sugar.

- 40 g (about 1/2 scant cup) oat flour or any flour
- 1 tablespoon maple syrup or honey
- 1 egg
- 180 ml (3/4 cup) egg whites
- 80 g (about 1/3 cup) Greek yogurt
- 1 teaspoon granular sweetener (erythritol)
- 1/3 teaspoon ground cinnamon
- Milk, if needed to thin

Instructions
- In a bowl, combine oat flour, maple syrup (or honey), egg, and egg whites. Mix well until the batter is smooth and free of lumps.
- Heat a medium non-stick skillet or crepe pan with a small amount of oil or butter over medium heat.
- Pour about 1/3 cup of batter into the pan and tilt the pan in a circular motion to spread the batter evenly.
- Cook for 1 to 2 minutes, then flip and cook the other side briefly.
- In a small bowl, mix the Greek yogurt with the sweetener and cinnamon. Spread the filling over each crepe and roll it up.
- Mix the sweetener and cinnamon in a small bowl. Sprinkle over the rolled crepes before serving.
Notes
- Adjust the thickness of the batter with milk as needed.
- Use different flavored yogurt for variety.
