Cilantro Lime Rice is a flavorful side dish that pairs well with many meals.
Ingredients

- 1 tablespoon extra-virgin olive oil
- 1 garlic clove, minced
- 1 cup long-grain white rice
- ½ teaspoon kosher salt
- 1½ cups water or broth
- Zest and juice of 1 lime (about 2 tablespoons juice)
- ½ cup finely chopped fresh cilantro
Instructions
- Rinse the rice in a fine-mesh sieve until the water runs clear, then set aside.
- Heat the olive oil in a saucepan over medium-high heat. Add the garlic and sauté for about 30 seconds until fragrant.
- Add the rice and salt, stirring for 1 minute to lightly toast the rice.
- Pour in the water, bring to a boil, cover, and reduce the heat to low. Simmer for 10–15 minutes until the liquid is absorbed and the rice is tender.
- Remove from heat and keep covered for 10 minutes to steam.
- Add the lime juice, lime zest, and chopped cilantro. Stir gently and serve immediately.
