Description

Cilantro Lime Rice is a flavorful side dish that pairs well with many meals.


Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 garlic clove, minced
  • 1 cup long-grain white rice
  • ½ teaspoon kosher salt
  • 1½ cups water or broth
  • Zest and juice of 1 lime (about 2 tablespoons juice)
  • ½ cup finely chopped fresh cilantro

Instructions

  1. Rinse the rice in a fine-mesh sieve until the water runs clear, then set aside.
  2. Heat the olive oil in a saucepan over medium-high heat. Add the garlic and sauté for about 30 seconds until fragrant.
  3. Add the rice and salt, stirring for 1 minute to lightly toast the rice.
  4. Pour in the water, bring to a boil, cover, and reduce the heat to low. Simmer for 10–15 minutes until the liquid is absorbed and the rice is tender.
  5. Remove from heat and keep covered for 10 minutes to steam.
  6. Add the lime juice, lime zest, and chopped cilantro. Stir gently and serve immediately.
