Ingredients

- 2 chicken breasts
- 1/4 cup fresh lime juice
- 1/4 cup chopped cilantro
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 ripe peaches, diced
- 1/2 red onion, diced
- 1 jalapeño, minced
- 1 tablespoon honey
- 1 tablespoon olive oil
- Cooked rice or quinoa, for serving
Instructions
- Marinate chicken in lime juice, cilantro, garlic powder, cumin, salt, and pepper for at least 30 minutes.
- Grill the chicken over medium heat for 6-7 minutes on each side or until cooked through.
- In a bowl, combine diced peaches, red onion, jalapeño, honey, and olive oil to make the salsa.
- Slice the grilled chicken.
- Serve the chicken over rice or quinoa and top with peach salsa.

- Adjust the spice level of the salsa by adding or reducing jalapeño.
