For the Dough:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt

For the Cheesecake Filling:

  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg

For the Churro Coating:

  • 1/2 cup granulated sugar
  • 2 tbsp ground cinnamon

Instructions

  • Prepare the Dough:
    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until combined.
    • Cover the dough and refrigerate for at least 30 minutes to firm it up.
  • Make the Cheesecake Filling:
    • In a medium bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
    • Add the egg and continue mixing until fully incorporated. Set aside.
  • Assemble the Cookies:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Take a tablespoon of chilled dough and flatten it in your hand. Place a small spoonful of cheesecake filling in the center and fold the dough around it, sealing the edges. Roll into a ball.
    • Place the cookie dough balls on the baking sheet, leaving space between them.
  • Bake the Cookies:
    • Bake the cookies for 12-15 minutes, or until the edges turn golden brown. Let them cool slightly on a wire rack.
  • Coat the Cookies:
    • In a shallow dish, mix the sugar and ground cinnamon.
    • While the cookies are still warm, gently roll them in the cinnamon-sugar mixture until coated.
