For the Dough:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
For the Cheesecake Filling:
- 1 package (8 oz) cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
For the Churro Coating:
- 1/2 cup granulated sugar
- 2 tbsp ground cinnamon
Instructions
- Prepare the Dough:
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until combined.
- Cover the dough and refrigerate for at least 30 minutes to firm it up.
- Make the Cheesecake Filling:
- In a medium bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth.
- Add the egg and continue mixing until fully incorporated. Set aside.
- Assemble the Cookies:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Take a tablespoon of chilled dough and flatten it in your hand. Place a small spoonful of cheesecake filling in the center and fold the dough around it, sealing the edges. Roll into a ball.
- Place the cookie dough balls on the baking sheet, leaving space between them.
- Bake the Cookies:
- Bake the cookies for 12-15 minutes, or until the edges turn golden brown. Let them cool slightly on a wire rack.
- Coat the Cookies:
- In a shallow dish, mix the sugar and ground cinnamon.
- While the cookies are still warm, gently roll them in the cinnamon-sugar mixture until coated.
- Serve and Enjoy:
- Serve warm, or let them cool completely. These cookies are perfect with coffee, tea, or a glass of milk!
