Description
Chocolate Strawberry Banana Yogurt Clusters are a delicious frozen treat combining fruit, yogurt, and chocolate.
Ingredients
Scale
- 2 cups strawberries, chopped
- 1 large banana, chopped
- ½ cup plain full-fat Greek yogurt
- 1 tablespoon honey
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- Chopped roasted and salted peanuts, for topping
Instructions
- Add the strawberries, banana, Greek yogurt, and honey to a large bowl. Gently stir until everything is evenly combined.
- Line a baking sheet with parchment paper. Scoop spoonfuls of the mixture onto the baking sheet, forming small clusters.
- Place the baking sheet in the freezer for about 1 hour, or until the clusters are firm.
- Melt the dark chocolate chips and coconut oil together using a microwave (in 30-second intervals, stirring between each) or a double boiler until smooth.
- Remove the frozen clusters from the freezer. Spoon or drizzle the melted chocolate over each cluster to coat.
- Immediately sprinkle chopped peanuts on top before the chocolate sets.
- Return the clusters to the freezer until the chocolate has fully hardened.
- Serve straight from the freezer and enjoy.
Notes
- Drizzling chocolate over the clusters works better than dipping, as the cold clusters can cause the chocolate to harden too quickly.
- Store clusters in an airtight container in the freezer for best texture.
- You can substitute peanuts with almonds, pistachios, or shredded coconut if desired.
- Use good-quality dark chocolate for the best flavor and texture.
