Rich and moist chocolate cake topped with smooth chocolate ganache.
Ingredients

- 1 cup (120 g) all-purpose flour
- 7/8 cup (175 g) granulated sugar
- 6 tablespoons (44 g) dark cocoa powder
- 1 teaspoon (4 g) baking soda
- 1/2 teaspoon (2 g) baking powder
- 1/2 teaspoon (3 g) salt
- 1/2 cup (120 g) buttermilk at room temperature
- 1/2 cup (118 g) hot water or coffee
- 1/4 cup (55 g) vegetable oil
- 2 large eggs at room temperature
- 1/2 teaspoon (2.1 g) pure vanilla extract
- 1/2 cup (115.5 g) heavy whipping cream
- 5 oz. dark chocolate chips
Instructions
- Preheat the oven to 325 degrees F. Spray one 8-inch round cake pan with non-stick spray, line with parchment paper, and spray again. Set aside.
- Combine the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined.
- In another bowl, combine the buttermilk, water (or coffee), oil, eggs, and vanilla.
- With the mixer on low speed, slowly add the wet ingredients to the dry, scraping the bottom of the bowl with a rubber spatula.
- Bake for 25 to 30 minutes, or until a toothpick inserted in the center of the cake comes out with a few moist crumbs on it.
- Cool in the pan for 10 minutes, then turn them out onto a cooling rack and cool completely or serve warm with ganache.
- In a microwave safe bowl, heat the cream for about one minute. Pour over the chocolate chips and stir until mixture is smooth. Allow to cool slightly.
- Mixture will thicken slightly as it cools.
Notes
- Use high-quality dark cocoa powder for better flavor.
- Feel free to adjust the amount of cream in the ganache to achieve desired consistency.
