Description

A warm, gooey chocolate chip cookie baked in a skillet.


Ingredients

  • 12 tbsp (1½ sticks, 170 g) butter, melted and cooled until warm
  • 1 cup (200 g) light brown sugar
  • ½ cup (100 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp (10 ml) vanilla extract
  • 2 cups + 2 tbsp (255 g) all-purpose flour
  • ½ tsp (2.5 g) baking soda
  • ½ tsp (3 g) salt
  • 1½ cups (255 g) chocolate chips, semi-sweet or a mix of semi-sweet and milk

Instructions

  1. Preheat Oven: Heat oven to 325°F (165°C).
  2. Prepare Butter & Sugars: Melt butter in the microwave for ~45 seconds until mostly melted, then let it cool slightly. In a medium bowl, beat together melted butter, brown sugar, and granulated sugar until blended.
  3. Add Eggs & Vanilla: Mix in the egg, egg yolk, and vanilla until fully combined.
  4. Mix Dry Ingredients: Stir in flour, baking soda, and salt just until combined. Gently fold in chocolate chips.
  5. Prepare Skillet & Bake: Press cookie dough evenly into a 10–12” oven-safe skillet. Bake for 28–35 minutes, until the top is just barely golden. Avoid over-baking, as it will continue cooking in the hot skillet once removed from the oven.
  6. Cool & Serve: Allow the cookie to cool in the skillet for 20–30 minutes before slicing. Serve warm, optionally with a scoop of vanilla ice cream.

Notes

  • Make Ahead: Dough can be refrigerated 1–2 days or frozen for 2–3 months.
  • Freezing Instructions: Cool the skillet cookie completely, slice into wedges, and store in an airtight container in the freezer for 2–3 months.
