Description

A refreshing salad that combines chickpeas, avocado, and feta for a nutritious meal.


Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped

  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, avocado, feta, cherry tomatoes, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil and lemon juice.
  3. Pour the dressing over the salad and toss gently.
  4. Season with salt and pepper to taste.
