Ingredients

  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened.
  2. Add garlic and cook for an additional minute.
  3. Stir in the diced chicken and cook until no longer pink.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Gradually add chicken broth, stirring constantly to avoid lumps.
  6. Add potatoes, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Stir in the heavy cream and frozen peas, and cook for another 5 minutes until heated through.
  8. Serve hot and enjoy!

Notes

  • For a thicker soup, add more flour.
