Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent, about 3-4 minutes.
  3. Stir in minced garlic and sliced mushrooms. Cook until mushrooms are golden brown, around 5-7 minutes.
  4. Pour in the vegetable broth and add shredded rotisserie chicken. Stir everything together.
  5. Lower the heat, then mix in heavy cream, thyme, salt, and pepper. Simmer gently for about 10 minutes.
