Ingredients

- 4 cups Vegetable Broth (Low-sodium recommended)
- 1 lb Rotisserie Chicken (Shredded)
- 8 oz Fresh Mushrooms (Button or Cremini)
- 1 medium Onion (Chopped)
- 3 cloves Garlic (Minced)
- 1 cup Heavy Cream (Can be substituted with half-and-half or plant-based cream)
- 1 tsp Thyme (Fresh preferred)
- to taste Salt
- to taste Pepper
- 2 tbsp Olive Oil (Can be replaced with butter)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and sliced mushrooms. Cook until mushrooms are golden brown, around 5-7 minutes.
- Pour in the vegetable broth and add shredded rotisserie chicken. Stir everything together.
- Lower the heat, then mix in heavy cream, thyme, salt, and pepper. Simmer gently for about 10 minutes.
- Adjust seasoning to your liking before ladling the soup into bowls. Serve immediately with crusty bread.
