Ingredients

  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • ¼ cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • Pinch of salt
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine the ground chicken, onion, garlic, and parsley.
  2. Add cumin, coriander, salt, and black pepper. Mix until evenly combined.
  3. Wet your hands and shape the mixture into elongated oval kofta.
  4. Preheat a grill or grill pan over medium-high heat and brush lightly with olive oil.
  5. Grill the kofta for 5–7 minutes per side, until golden brown and fully cooked (internal temperature should reach 75°C / 165°F).
  6. In a small bowl, mix the yogurt, lemon juice, and a pinch of salt to make the sauce.
  7. Serve the grilled kofta warm with the yogurt sauce and your favorite side dishes.
