Ingredients

  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add the chopped onion and minced garlic to the skillet and sauté until softened.
  4. Stir in the rice, beef broth, cream of mushroom soup, diced tomatoes, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  6. Transfer the mixture to a greased casserole dish.
  7. Top with shredded cheddar cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
