    • 1 ⅓ cups shredded mozzarella cheese
    • 1 ½ tablespoons chopped fresh parsley or dill (optional)
    • ½ teaspoon salt (adjust to taste)
    • ⅛ teaspoon black pepper
    • 2 tablespoons light olive oil (or any high-heat cooking oil)
  • For the Garlic Aioli:
    • ⅓ cup mayonnaise
    • 1 garlic clove, finely minced or pressed
    • ½ tablespoon lemon juice
    • ¼ teaspoon salt
    • ⅛ teaspoon black pepper

Instructions

  • Prepare the Fritters Mixture: In a large bowl, combine diced chicken, eggs, mayonnaise, flour, shredded mozzarella, chopped parsley or dill, salt, and pepper. Mix well until all ingredients are thoroughly combined. Cover the bowl and refrigerate the mixture for at least 2 hours or overnight for the best flavor and texture.
  • Cook the Fritters: Heat a large non-stick skillet over medium heat and add 2 tablespoons of oil. Once the oil is hot, scoop a heaping tablespoon of the chicken mixture into the skillet. Gently flatten the top with the back of a spoon to form a patty. Cook each fritter for about 3-4 minutes on the first side, then flip and cook for another 3 minutes on the other side, or until the fritters are golden brown and fully cooked inside.
  • Make the Garlic Aioli: In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, salt, and pepper. Stir until smooth and creamy. Serve immediately with the hot fritters.
