Description
A delicious and healthy twist on nachos using cauliflower as the base, topped with beans, cheese, and fresh toppings.

- 1 tablespoon olive oil or avocado oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground cumin
- ½ teaspoon paprika
- ¼ teaspoon chili powder
- ½ teaspoon sea salt
- 5 cups cauliflower florets, sliced into ½-inch pieces
- ⅓ cup refried beans
- ¾ cup shredded Mexican-style cheddar cheese
- 1 jalapeño, thinly sliced
- ½ cup chopped grape or cherry tomatoes
- ¼ cup diced red onion
- ¼ cup chopped fresh cilantro
- 1 avocado, sliced or chopped (optional)
Instructions
- Preheat the oven to 425°F (220°C). Lightly spray a large baking sheet with olive oil or avocado oil.
- Slice the cauliflower into ½-inch thick pieces.
- In a large bowl, mix the oil, garlic powder, onion powder, cumin, paprika, chili powder, and sea salt.
- Add the cauliflower to the bowl and gently toss until evenly coated.
- Spread the cauliflower on the baking sheet in a single layer, leaving space between pieces.
- Roast for 20 minutes, until tender and lightly browned.
- Remove the baking sheet from the oven and push the cauliflower toward the center.
- Spoon the refried beans over the cauliflower, sprinkle with cheese, and add jalapeño slices.
- Return to the oven and bake for 6–7 minutes, until the cheese is melted and beans are heated through.
- Remove from the oven and top with tomatoes, red onion, cilantro, and avocado if using.
- Serve immediately from the sheet pan or transfer to serving plates.
Notes
- Spread the cauliflower well on the pan to help it roast instead of steam.
- If the refried beans are thick, warm them slightly before spreading.
- Adjust spice levels by increasing or reducing chili powder and jalapeño.
- This dish works well as a light main meal or a side dish.
- Best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 2 days.
