Description

    • 3 oz cream cheese
    • 3 tbsp powdered sugar
  • Chocolate Chip Cookie Dough:
    • 1/2 cup butter, slightly softened
    • 1/2 cup brown sugar
    • 1/3 cup granulated sugar
    • 1 egg
    • 1 tsp vanilla extract
    • 1 3/4 cup all-purpose flour
    • 3 tbsp corn starch
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 2/3 cup semi-sweet chocolate chips, plus more for topping

Instructions

  1. In a small bowl, cream together the cream cheese and powdered sugar until smooth.
  2. Divide the mixture into 9 small mounds on a parchment-lined plate or baking sheet. Freeze for 15–30 minutes until firm.
  3. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  4. In a medium bowl, cream together butter, brown sugar, and granulated sugar until smooth.
  5. Mix in the egg and vanilla extract until fully incorporated.
  6. Gradually add flour, corn starch, baking soda, and salt, stirring just until combined.
  7. Fold in the chocolate chips.
  8. Using a large cookie scoop, portion out cookie dough balls.
  9. Make a small well in the center of each dough ball and place a cheesecake mound inside.
  10. Fold the cookie dough over the cheesecake and seal well.
  11. Place cookies on the prepared baking sheet and bake for 11 minutes. Cookies may look slightly underdone in the middle — this is fine, they will continue baking on the sheet as they cool.
  12. Immediately top with extra chocolate chips as desired.
  13. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
