A cozy and creamy cheddar garlic herb potato soup that warms you up on chilly days.
Ingredients

- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
- Add diced potatoes, vegetable broth, thyme, and rosemary. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in heavy cream and shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a thicker soup, blend more of the potatoes.
- Garnish with extra cheddar cheese and fresh herbs if desired.
- This soup can be stored in the refrigerator for up to 3 days.
