A delicious and healthy alternative to traditional pizza crust made from cauliflower.
Ingredients

- 2 cups riced cauliflower (about ½ head)
- 1 clove garlic, minced
- 1 cup part-skim shredded mozzarella cheese
- 1 egg, beaten
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Olive oil spray or 1 teaspoon olive oil, for greasing
- ⅓ cup pizza sauce
- 1 cup part-skim shredded mozzarella cheese
- Fresh basil, for garnish
- Crushed red pepper, for garnish
Instructions
- Preheat oven: 400°F (200°C).
- Prep baking sheet/pizza stone: Line with parchment and lightly grease with olive oil.
- Prep cauliflower: Remove stems and leaves, chop florets into chunks. Pulse in a food processor until rice-like texture.
- Cook cauliflower rice: Sauté in a non-stick skillet over medium heat until translucent (~6–8 min) or microwave in an uncovered bowl for 8 minutes.
- Mix cauliflower dough: Combine cooked cauliflower, garlic, mozzarella, egg, basil, and oregano.
- Form crust: Spread dough on parchment into a circle ~9–10 inches diameter, ¼–⅓ inch thick.
- Bake crust: 25–30 minutes, until golden and crispy.
- Prepare toppings: Reduce oven to broil. Spread pizza sauce and cheese on crust. Add additional toppings if desired.
- Broil pizza: 5 minutes, until cheese melts and toppings are hot.
- Serve: Cool 2–3 minutes, garnish with fresh basil and crushed red pepper, then slice.
Notes
- Don’t overload the crust with heavy toppings; it may get soggy.
- You can prepare the cauliflower rice ahead of time and store in the fridge for convenience.
- For extra crispy edges, bake a few minutes longer before adding toppings.
