  • Diet: Low Calorie

Description

A delicious and healthy alternative to traditional pizza crust made from cauliflower.

Ingredients

Scale
  • 2 cups riced cauliflower (about ½ head)
  • 1 clove garlic, minced
  • 1 cup part-skim shredded mozzarella cheese
  • 1 egg, beaten
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Olive oil spray or 1 teaspoon olive oil, for greasing
  • ⅓ cup pizza sauce
  • 1 cup part-skim shredded mozzarella cheese
  • Fresh basil, for garnish
  • Crushed red pepper, for garnish

Instructions

  1. Preheat oven: 400°F (200°C).
  2. Prep baking sheet/pizza stone: Line with parchment and lightly grease with olive oil.
  3. Prep cauliflower: Remove stems and leaves, chop florets into chunks. Pulse in a food processor until rice-like texture.
  4. Cook cauliflower rice: Sauté in a non-stick skillet over medium heat until translucent (~6–8 min) or microwave in an uncovered bowl for 8 minutes.
  5. Mix cauliflower dough: Combine cooked cauliflower, garlic, mozzarella, egg, basil, and oregano.
  6. Form crust: Spread dough on parchment into a circle ~9–10 inches diameter, ¼–⅓ inch thick.
  7. Bake crust: 25–30 minutes, until golden and crispy.
  8. Prepare toppings: Reduce oven to broil. Spread pizza sauce and cheese on crust. Add additional toppings if desired.
  9. Broil pizza: 5 minutes, until cheese melts and toppings are hot.
  10. Serve: Cool 2–3 minutes, garnish with fresh basil and crushed red pepper, then slice.

Notes

  • Don’t overload the crust with heavy toppings; it may get soggy.
  • You can prepare the cauliflower rice ahead of time and store in the fridge for convenience.
  • For extra crispy edges, bake a few minutes longer before adding toppings.
