- 2 pounds boneless, skinless chicken breasts, cut into small pieces
- Salt and freshly ground black pepper, to taste
- 1 cup low-sodium chicken broth
- 2 tablespoons coconut aminos or alcohol-free soy-style seasoning
- 1/2 teaspoon freshly grated ginger
- 1/4 cup hoisin-style sauce made without alcohol
- 1 tablespoon rice vinegar
- 2 tablespoons cornstarch
- 3 cloves garlic, minced
- 2 teaspoons sesame oil (or canola oil)
- 1–2 teaspoons Sriracha-style hot sauce, to taste
- 3/4 cup unsalted cashews
- 1 head green leafy lettuce (romaine, bib, or butter lettuce)
- 5 green onions, chopped and divided
Instructions
- Season the chicken pieces with salt and black pepper.
- In a small bowl, whisk together chicken broth, soy-style seasoning, ginger, hoisin-style sauce, rice vinegar, and cornstarch until smooth.
- Heat oil in a large skillet over medium heat. Add chicken and cook, turning once, until fully cooked, about 5 minutes.
- Add garlic and cook for about 30 seconds until fragrant.
- Reduce heat to low, pour in the sauce, and cook while stirring until thickened.
- Stir in hot sauce to taste, then add cashews and most of the chopped green onions, reserving some for garnish.
- Spoon the chicken mixture into lettuce leaves and top with remaining green onions before serving.
