Description

Delicious Carrot Cake Cheesecake made with cake mix.


Ingredients

Scale
  • 1 box carrot cake mix
  • 1 package cream cheese (8 oz)
  • 1 cup sour cream
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup shredded carrots
  • 1/2 cup chopped walnuts
  • 1 cup powdered sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the carrot cake mix, eggs, oil, and vanilla.
  3. Add shredded carrots and walnuts to the mixture.
  4. In another bowl, beat the cream cheese, sour cream, powdered sugar, and cinnamon until smooth.
  5. Grease a springform pan and pour half of the cake batter into the pan.
  6. Spread the cream cheese mixture over the batter.
  7. Top with the remaining cake batter.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Let it cool before removing from the pan.

Notes

  • Store leftovers in the refrigerator.
  • Can be topped with cream cheese frosting.
  • Allow the cheesecake to chill for better flavor.
