Delicious Carrot Cake Cheesecake made with cake mix.
Ingredients

- 1 box carrot cake mix
- 1 package cream cheese (8 oz)
- 1 cup sour cream
- 3 eggs
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup shredded carrots
- 1/2 cup chopped walnuts
- 1 cup powdered sugar
- 1 tsp cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the carrot cake mix, eggs, oil, and vanilla.
- Add shredded carrots and walnuts to the mixture.
- In another bowl, beat the cream cheese, sour cream, powdered sugar, and cinnamon until smooth.
- Grease a springform pan and pour half of the cake batter into the pan.
- Spread the cream cheese mixture over the batter.
- Top with the remaining cake batter.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let it cool before removing from the pan.
Notes
- Store leftovers in the refrigerator.
- Can be topped with cream cheese frosting.
- Allow the cheesecake to chill for better flavor.
