Description
Delicious caramel pecan turtle cheesecake bars with a graham cracker crust.
Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup sugar
- 16 oz cream cheese, softened
- ½ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup pecans, chopped
- 1 cup caramel sauce (plus extra for drizzling)
- ¼ cup chocolate chips
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9×9-inch baking pan or line it with parchment paper.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
- Press the mixture into the bottom of the prepared pan.
- Bake for 10 minutes, then remove and let cool slightly.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Pour the cheesecake mixture over the cooled crust, spreading evenly.
- Sprinkle the chopped pecans over the cheesecake layer.
- Drizzle half of the caramel sauce over the pecans.
- Sprinkle chocolate chips on top.
- Bake for 30-35 minutes or until the center is set and slightly jiggly.
- Let cool completely, then refrigerate for at least 4 hours or overnight.
- Lift the bars out of the pan and cut into squares. Drizzle with remaining caramel sauce before serving.
Notes
- Add a pinch of sea salt on top of the caramel drizzle for extra flavor.
- These bars can be stored in the fridge for up to a week but are best enjoyed fresh.
