Description

Delicious caramel pecan turtle cheesecake bars with a graham cracker crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar
  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup pecans, chopped
  • 1 cup caramel sauce (plus extra for drizzling)
  • ¼ cup chocolate chips

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  3. Press the mixture into the bottom of the prepared pan.
  4. Bake for 10 minutes, then remove and let cool slightly.
  5. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Stir in the vanilla extract.
  8. Pour the cheesecake mixture over the cooled crust, spreading evenly.
  9. Sprinkle the chopped pecans over the cheesecake layer.
  10. Drizzle half of the caramel sauce over the pecans.
  11. Sprinkle chocolate chips on top.
  12. Bake for 30-35 minutes or until the center is set and slightly jiggly.
  13. Let cool completely, then refrigerate for at least 4 hours or overnight.
  14. Lift the bars out of the pan and cut into squares. Drizzle with remaining caramel sauce before serving.

Notes

  • Add a pinch of sea salt on top of the caramel drizzle for extra flavor.
  • These bars can be stored in the fridge for up to a week but are best enjoyed fresh.
