Ingredients

  • 1 package of puff pastry
  • 1 cup fresh basil leaves
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup olive oil
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Blend basil, parmesan, pine nuts, and garlic in a food processor.
  3. Slowly add olive oil and blend until smooth. Season with salt and pepper.
  4. Roll out puff pastry and cut into a circle.
  5. Spread pesto on the pastry, leaving a border.
  6. Arrange mozzarella and cherry tomatoes on top of the pesto.
  7. Fold the edges of the pastry over the filling to create a wreath shape.
  8. Bake for 20-25 minutes or until golden brown.
  9. Let cool slightly before serving.
