Ingredients

- 1 package of puff pastry
- 1 cup fresh basil leaves
- 1/2 cup parmesan cheese, grated
- 1/2 cup pine nuts
- 2 cloves garlic
- 1/2 cup olive oil
- 1 cup cherry tomatoes, halved
- 8 ounces fresh mozzarella, sliced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Blend basil, parmesan, pine nuts, and garlic in a food processor.
- Slowly add olive oil and blend until smooth. Season with salt and pepper.
- Roll out puff pastry and cut into a circle.
- Spread pesto on the pastry, leaving a border.
- Arrange mozzarella and cherry tomatoes on top of the pesto.
- Fold the edges of the pastry over the filling to create a wreath shape.
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- Serve warm for best flavor.
- Garnish with extra basil if desired.
- You can substitute walnuts for pine nuts if preferred.
