Description

A delicious garlic bread topped with fresh mozzarella, tomatoes, and basil.


Ingredients

  • 1 loaf ciabatta bread, cut horizontally in half
  • 4 tablespoons salted butter, softened
  • 3 cloves garlic, minced
  • 12 oz fresh mozzarella cheese, sliced
  • 1/2 cup balsamic vinegar
  • 2 medium tomatoes, sliced
  • Salt and freshly ground black pepper, to taste
  • 1/3 cup chopped fresh basil

Instructions

  1. Preheat oven to 400°F. Place both halves of the bread cut-side up on a baking sheet.
  2. In a small bowl, mix butter and garlic. Spread evenly over the bread.
  3. Arrange mozzarella slices over the bread so it is fully covered.
  4. Bake for 12–15 minutes, until cheese is melted and bread is lightly toasted.
  5. Meanwhile, pour balsamic vinegar into a small saucepan. Bring to a boil, then reduce heat and simmer for 5–7 minutes until reduced by half and slightly thickened. Set aside.
  6. Remove bread from oven. Top with tomato slices and season with salt and pepper.
  7. Sprinkle with fresh basil and drizzle with balsamic reduction.
  8. Slice and serve warm.

Notes

  • Use mozzarella made without animal rennet.
  • Best served immediately while the cheese is warm and soft.
