Description
This recipe makes a refreshing canned strawberry lemonade concentrate.

- 6 cups strawberries, cleaned and tops removed
- 4 cups lemon juice (fresh, bottled, or a mix)
- 6 cups granulated sugar
Instructions
- Prep for canning: Prepare a water bath canner, pint jars, lids, and bands. Keep lids and bands in simmering water. Heat jars (no need to sterilize).
- Puree strawberries: Blend strawberries in a food processor until fully liquified (no chunks). Pour puree into a large non-reactive saucepan.
- Heat mixture: Add lemon juice and sugar. Stir and heat over medium until the mixture reaches 190–200°F. Do not boil. Skim off any foam.
- Fill jars: Pour hot concentrate into hot jars, leaving ¼ inch headspace. Seal with lids and bands until fingertip tight.
- Process: Place jars in boiling water canner and process for 15 minutes at a full boil. Remove and let sit undisturbed for 12–24 hours until sealed. Unsealed jars should be refrigerated and used within 2 weeks. Sealed jars can be stored in a cool, dark place for up to 2 years.
Notes
- A mix of bottled and fresh lemon juice saves time while keeping great flavor.
- To serve: mix 1 part concentrate with 2 parts water or club soda.
