Cajun Chicken with Bell Peppers is a flavorful and hearty dish that combines tender chicken breasts with zesty Cajun seasoning and colorful bell peppers.

- 1 teaspoon paprika
- ¼ teaspoon cayenne pepper
- ¼ teaspoon oregano
- ¼ teaspoon thyme
- ¼ teaspoon salt
- 2 small bell peppers, thinly sliced (or mini sweet peppers)
- 4 small chicken breasts
- 4 cloves garlic, minced
- 6 oz cream cheese, cold and sliced into 8 pieces
- ½ cup shredded cheddar cheese
Instructions
- In a small bowl, combine paprika, cayenne, oregano, thyme, and salt. Mix well.
- Preheat oven to 375°F (190°C).
- Spread sliced bell peppers across the bottom of a casserole dish.
- Place chicken breasts on top of the peppers.
- Generously sprinkle the Cajun seasoning over the chicken.
- Top with minced garlic.
- Place 2 slices of cream cheese on each chicken breast.
- Sprinkle shredded cheddar cheese over the top.
- Bake uncovered for 20–30 minutes, until the chicken is fully cooked through.
- Broil for 2 minutes at the end if a golden top is desired.
- To serve, scoop the cooked peppers from underneath and place around and over the chicken.

- Cooking time will vary depending on the thickness of the chicken breasts.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
