Description

Cajun Chicken with Bell Peppers is a flavorful and hearty dish that combines tender chicken breasts with zesty Cajun seasoning and colorful bell peppers.


Ingredients

  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon oregano
  • ¼ teaspoon thyme
  • ¼ teaspoon salt
  • 2 small bell peppers, thinly sliced (or mini sweet peppers)
  • 4 small chicken breasts
  • 4 cloves garlic, minced
  • 6 oz cream cheese, cold and sliced into 8 pieces
  • ½ cup shredded cheddar cheese

Instructions

  1. In a small bowl, combine paprika, cayenne, oregano, thyme, and salt. Mix well.
  2. Preheat oven to 375°F (190°C).
  3. Spread sliced bell peppers across the bottom of a casserole dish.
  4. Place chicken breasts on top of the peppers.
  5. Generously sprinkle the Cajun seasoning over the chicken.
  6. Top with minced garlic.
  7. Place 2 slices of cream cheese on each chicken breast.
  8. Sprinkle shredded cheddar cheese over the top.
  9. Bake uncovered for 20–30 minutes, until the chicken is fully cooked through.
  10. Broil for 2 minutes at the end if a golden top is desired.
  11. To serve, scoop the cooked peppers from underneath and place around and over the chicken.
