Description
A fresh and flavorful burrata platter with tomatoes and pesto, perfect for sharing.
Ingredients
Scale
- 1 loaf rustic bread or French baguette
- Olive oil, for drizzling
- 2 garlic cloves, peeled
- 16 oz grape or cherry tomatoes, halved
- 1 tablespoon olive oil
- Kosher salt and freshly ground black pepper, to taste
- 8 ounces burrata
- 3 tablespoons basil pesto
- Fresh basil, for garnish
Instructions
- Preheat oven to 400°F. Slice the bread into 1-inch thick pieces.
- Drizzle both sides of the bread slices with olive oil and place in a single layer on a large baking sheet.
- Toast for about 10 minutes, flipping halfway through, until both sides are golden brown.
- Remove the bread from the oven and immediately rub the peeled garlic cloves over the warm toasts to infuse garlic flavor.
- While the bread toasts, place the halved tomatoes in a small bowl. Drizzle with olive oil and season with salt and pepper.
- To serve, place the burrata on a serving platter. Spoon the tomatoes around the burrata.
- Drizzle pesto over the burrata and tomatoes. Season lightly with additional salt and pepper if desired.
- Garnish with fresh basil and arrange the garlic toasts around the platter. Serve immediately.
Notes
- The bread can also be grilled instead of oven-toasted for a smoky flavor.
- Best served fresh while the toasts are still warm and crisp.
