Description

A fresh and flavorful burrata platter with tomatoes and pesto, perfect for sharing.


Ingredients

  • 1 loaf rustic bread or French baguette
  • Olive oil, for drizzling
  • 2 garlic cloves, peeled
  • 16 oz grape or cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Kosher salt and freshly ground black pepper, to taste
  • 8 ounces burrata
  • 3 tablespoons basil pesto
  • Fresh basil, for garnish

Instructions

  1. Preheat oven to 400°F. Slice the bread into 1-inch thick pieces.
  2. Drizzle both sides of the bread slices with olive oil and place in a single layer on a large baking sheet.
  3. Toast for about 10 minutes, flipping halfway through, until both sides are golden brown.
  4. Remove the bread from the oven and immediately rub the peeled garlic cloves over the warm toasts to infuse garlic flavor.
  5. While the bread toasts, place the halved tomatoes in a small bowl. Drizzle with olive oil and season with salt and pepper.
  6. To serve, place the burrata on a serving platter. Spoon the tomatoes around the burrata.
  7. Drizzle pesto over the burrata and tomatoes. Season lightly with additional salt and pepper if desired.
  8. Garnish with fresh basil and arrange the garlic toasts around the platter. Serve immediately.

Notes

  • The bread can also be grilled instead of oven-toasted for a smoky flavor.
  • Best served fresh while the toasts are still warm and crisp.
