Description

Delicious breakfast taquitos filled with scrambled eggs, sausage, and cheese.


Ingredients

  • 7 oz box fully cooked beef sausage links
  • 5 large eggs
  • Salt and freshly ground black pepper, to taste
  • 1½ cups shredded cheese (any preferred variety)
  • 10 white corn tortillas or 6-inch flour tortillas

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place sausage links in a large skillet over medium-high heat. Cook, turning occasionally, until heated through. Remove to a plate, leaving any drippings in the pan.
  3. Crack eggs into a bowl, add a splash of water or milk, and whisk well. Pour into the skillet. Season with salt and pepper. Cook while stirring and scrambling until just set. Remove from heat.
  4. Warm tortillas on a dry skillet or griddle for a few seconds until soft and pliable.
  5. Divide scrambled eggs among the tortillas and sprinkle with shredded cheese. Place a sausage link on top of each. Roll tightly and place seam-side down on a foil- or parchment-lined baking sheet.
  6. Lightly spray with cooking spray and bake for 10–15 minutes or until golden and crispy. Serve with salsa.

Notes

  • Air Fryer: Cook at 400°F for 8–10 minutes until crispy.
  • Make Ahead: Assemble and refrigerate for several hours before baking.
  • Freezing: Freeze assembled (unbaked) taquitos for up to 2 months. Thaw, then bake as directed, or bake from frozen at 350°F for 15 minutes covered, then 15 minutes uncovered.
