Description
Delicious breakfast taquitos filled with scrambled eggs, sausage, and cheese.
Ingredients

- 7 oz box fully cooked beef sausage links
- 5 large eggs
- Salt and freshly ground black pepper, to taste
- 1½ cups shredded cheese (any preferred variety)
- 10 white corn tortillas or 6-inch flour tortillas
Instructions
- Preheat oven to 425°F (220°C).
- Place sausage links in a large skillet over medium-high heat. Cook, turning occasionally, until heated through. Remove to a plate, leaving any drippings in the pan.
- Crack eggs into a bowl, add a splash of water or milk, and whisk well. Pour into the skillet. Season with salt and pepper. Cook while stirring and scrambling until just set. Remove from heat.
- Warm tortillas on a dry skillet or griddle for a few seconds until soft and pliable.
- Divide scrambled eggs among the tortillas and sprinkle with shredded cheese. Place a sausage link on top of each. Roll tightly and place seam-side down on a foil- or parchment-lined baking sheet.
- Lightly spray with cooking spray and bake for 10–15 minutes or until golden and crispy. Serve with salsa.
Notes
- Air Fryer: Cook at 400°F for 8–10 minutes until crispy.
- Make Ahead: Assemble and refrigerate for several hours before baking.
- Freezing: Freeze assembled (unbaked) taquitos for up to 2 months. Thaw, then bake as directed, or bake from frozen at 350°F for 15 minutes covered, then 15 minutes uncovered.
