Description

Delicious blueberry peach crumble with a buttery oat topping.


Ingredients

  • 2 cups blueberries
  • 2½ cups peeled and sliced peaches (about 56 peaches)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter, diced

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine blueberries, peaches, lemon juice, lemon zest, vanilla, sugar, and flour. Gently toss and set aside.
  3. In another bowl, whisk together flour, oats, brown sugar, granulated sugar, salt, and cinnamon.
  4. Add cold butter and mix with your fingers until large crumbs form.
  5. Pour fruit mixture into a 2-quart baking dish or skillet. Evenly sprinkle crumble topping over the fruit.
  6. Place dish on a baking sheet and bake for 40–45 minutes, until topping is golden and fruit is bubbly.
  7. Serve warm or at room temperature, optionally with vanilla ice cream.

Notes

  • Can be baked in individual ramekins.
  • Crumble topping can be made ahead and refrigerated for up to 2 days.
  • Store baked crumble in the refrigerator for up to 3 days.
