Description
Delicious blueberry peach crumble with a buttery oat topping.
Ingredients

- 2 cups blueberries
- 2½ cups peeled and sliced peaches (about 5–6 peaches)
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon vanilla extract
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/2 cup all-purpose flour
- 1/2 cup old-fashioned oats
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 6 tablespoons cold butter, diced
Instructions
- Preheat oven to 350°F.
- In a large bowl, combine blueberries, peaches, lemon juice, lemon zest, vanilla, sugar, and flour. Gently toss and set aside.
- In another bowl, whisk together flour, oats, brown sugar, granulated sugar, salt, and cinnamon.
- Add cold butter and mix with your fingers until large crumbs form.
- Pour fruit mixture into a 2-quart baking dish or skillet. Evenly sprinkle crumble topping over the fruit.
- Place dish on a baking sheet and bake for 40–45 minutes, until topping is golden and fruit is bubbly.
- Serve warm or at room temperature, optionally with vanilla ice cream.
Notes
- Can be baked in individual ramekins.
- Crumble topping can be made ahead and refrigerated for up to 2 days.
- Store baked crumble in the refrigerator for up to 3 days.
