Blueberry Cheesecake Protein Balls are a healthy snack packed with protein and flavor.

Ingredients

Scale
  • ½ cup protein powder
  • ½ cup coconut flour
  • 3 Tbsp granulated sugar of choice
  • 4 Tbsp cream cheese (dairy or dairy-free)
  • ¼ cup blueberry puree

Instructions

  1. Mash blueberries or puree in a small blender.
  2. Mix protein powder, coconut flour, blueberry puree, and cream cheese together, using your hands to knead and get the dough to come together.
  3. Give it a quick taste and add sugar if desired.
  4. Add more coconut flour if the dough is too soft, or add a teaspoon or more of puree, water, or almond milk if the dough is too thick.
  5. Roll the batter into tablespoon-sized balls and refrigerate for 15 minutes to set.

Notes

  • Use a light colored protein powder such as unflavored or vanilla for the best results.
  • For a low carb option, use a sugar-free substitute like monk fruit sweetener or stevia powder.
