Description

Delicious and festive eggnog crepes made easily in a blender.


Ingredients

Scale
  • 1 3/4 cups flour plain or all-purpose
  • 4 eggs large
  • 2 tablespoons butter melted, or melted coconut oil
  • 2 cups egg nog
  • 1/4 cup milk
  • 2 tablespoons sugar
  • 1 pinch salt

Instructions

  1. Throw all ingredients into a blender and blend until smooth. Scrape down any flour stuck to the sides and blend again until lump free.
  2. Heat a nonstick pan or crêpe maker over medium heat and lightly grease with melted butter.
  3. Pour 1/4 cup of batter onto the pan and quickly swirl to cover the inside.
  4. Cook for 1 minute, loosen the edges with a spatula, and flip.
  5. Cook for an additional 45 seconds to 1 minute.
  6. Slide the crepe onto a plate and repeat with remaining batter, greasing the pan in between.
  7. Serve with eggnog cheesecake filling and sugar-coated mixed berries.

  • Be quick with swirling the batter to ensure thin crepes.
