Description
Delicious and festive eggnog crepes made easily in a blender.
Ingredients
Scale
- 1 3/4 cups flour plain or all-purpose
- 4 eggs large
- 2 tablespoons butter melted, or melted coconut oil
- 2 cups egg nog
- 1/4 cup milk
- 2 tablespoons sugar
- 1 pinch salt
Instructions
- Throw all ingredients into a blender and blend until smooth. Scrape down any flour stuck to the sides and blend again until lump free.
- Heat a nonstick pan or crêpe maker over medium heat and lightly grease with melted butter.
- Pour 1/4 cup of batter onto the pan and quickly swirl to cover the inside.
- Cook for 1 minute, loosen the edges with a spatula, and flip.
- Cook for an additional 45 seconds to 1 minute.
- Slide the crepe onto a plate and repeat with remaining batter, greasing the pan in between.
- Serve with eggnog cheesecake filling and sugar-coated mixed berries.
Notes
- Be quick with swirling the batter to ensure thin crepes.
