- 2 tbsp orange juice
- ½ tsp salt
- ½ cup brown sugar, packed
- 1 tsp orange zest
- 2 cups dried cranberries, chopped if large
- ½ tsp baking soda
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
Instructions
- Preheat oven to 350°F (175°C).
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg, orange juice, and orange zest. Mix until fully combined.
- In a separate bowl, whisk together flour, salt, and baking soda.
- Gradually add the dry mixture into the wet mixture and stir until a soft dough forms.
- Fold in the dried cranberries by hand until evenly distributed.
- Drop tablespoon-sized portions of dough onto a lined baking sheet, spacing them apart.
- Bake for 8–10 minutes, until the edges are lightly golden.
- Let cookies rest on the sheet for 2 minutes, then transfer to a wire rack to cool completely.
- In a bowl, whisk powdered sugar, orange juice, and orange zest until smooth.
- Drizzle icing over cooled cookies.
- Allow icing to fully harden before storing in an airtight container.
