Ingredients

- 1 cup long-grain rice
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 1 lemon, juiced and zested
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat.
- Add the rice and sauté for 2-3 minutes until slightly toasted.
- Pour in the broth, lemon juice, lemon zest, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Cook for 15-20 minutes until the rice is tender and liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff rice with a fork and stir in chopped parsley before serving.

- Adjust lemon juice according to your taste.
- For added flavor, sauté onions or garlic with the rice.
