Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 lemon, juiced and zested
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, heat olive oil over medium heat.
  3. Add the rice and sauté for 2-3 minutes until slightly toasted.
  4. Pour in the broth, lemon juice, lemon zest, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Cook for 15-20 minutes until the rice is tender and liquid is absorbed.
  7. Remove from heat and let it sit covered for 5 minutes.
  8. Fluff rice with a fork and stir in chopped parsley before serving.
