Ingredients

Scale
  • 190 g all-purpose flour
  • 5 g cornstarch
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 115 g unsalted butter, softened
  • 150 g granulated sugar
  • 1 large egg
  • 5 ml vanilla extract
  • 115 g white chocolate, chopped into small chunks
  • 110 g blueberries
  • 70 g cream cheese, softened
  • 10 g powdered sugar
  • 2.5 ml vanilla extract
  • 34 tablespoons (45–60 g) blueberry jam

Instructions

  1. In a small bowl, whisk together flour, cornstarch, salt, and baking powder. Set aside.
  2. Beat butter and sugar on high speed for about 2 minutes until light and creamy.
  3. Add the egg and vanilla and mix to combine.
  4. On low speed, gradually mix in the flour mixture until fully incorporated.
  5. Fold in ¾ of the white chocolate chunks.
  6. Gently fold in blueberries using a rubber spatula, being careful not to break them.
  7. Cover the dough and refrigerate for 2 hours.
  8. Mix cream cheese, powdered sugar, and vanilla until combined. Chill in the fridge.
  9. Preheat oven to 175°C. Line baking sheets with parchment paper.
  10. Scoop 1 heaping tablespoon of dough and make a deep bowl.
  11. Fill with 1 teaspoon of cream cheese mixture and ¾ teaspoon of blueberry jam.
  12. Top with ½ tablespoon of cookie dough and seal any openings.
  13. Roll gently into a ball. Press remaining white chocolate chunks on top and sides.
  14. Freeze cookie balls for 10 minutes before baking.
  15. Arrange cookie balls on baking sheet, 7–8 cm apart.
  16. Bake 16–18 minutes.
  17. Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Freezing the cookie balls helps them hold their shape while baking.
  • Use fresh or frozen blueberries (if frozen, do not thaw).
  • You can substitute the white chocolate with milk or dark chocolate if desired.
