Best Ever Blueberry Cookies with a creamy filling.
Ingredients

- 190 g all-purpose flour
- 5 g cornstarch
- 1/4 tsp salt
- 3/4 tsp baking powder
- 115 g unsalted butter, softened
- 150 g granulated sugar
- 1 large egg
- 5 ml vanilla extract
- 115 g white chocolate, chopped into small chunks
- 110 g blueberries
- 70 g cream cheese, softened
- 10 g powdered sugar
- 2.5 ml vanilla extract
- 3–4 tablespoons (45–60 g) blueberry jam
Instructions
- In a small bowl, whisk together flour, cornstarch, salt, and baking powder. Set aside.
- Beat butter and sugar on high speed for about 2 minutes until light and creamy.
- Add the egg and vanilla and mix to combine.
- On low speed, gradually mix in the flour mixture until fully incorporated.
- Fold in ¾ of the white chocolate chunks.
- Gently fold in blueberries using a rubber spatula, being careful not to break them.
- Cover the dough and refrigerate for 2 hours.
- Mix cream cheese, powdered sugar, and vanilla until combined. Chill in the fridge.
- Preheat oven to 175°C. Line baking sheets with parchment paper.
- Scoop 1 heaping tablespoon of dough and make a deep bowl.
- Fill with 1 teaspoon of cream cheese mixture and ¾ teaspoon of blueberry jam.
- Top with ½ tablespoon of cookie dough and seal any openings.
- Roll gently into a ball. Press remaining white chocolate chunks on top and sides.
- Freeze cookie balls for 10 minutes before baking.
- Arrange cookie balls on baking sheet, 7–8 cm apart.
- Bake 16–18 minutes.
- Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Freezing the cookie balls helps them hold their shape while baking.
- Use fresh or frozen blueberries (if frozen, do not thaw).
- You can substitute the white chocolate with milk or dark chocolate if desired.
