Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic, sauté until softened.
  5. Stir in tomato paste, thyme, salt, and pepper.
  6. Add beef back to the pot with broth, carrots, potatoes, and bay leaf.
  7. Bring to a boil, then reduce heat to low.
  8. Cover and simmer for 2 hours or until beef is tender.
  9. Discard bay leaf before serving.
