A hearty and flavorful beef stew that is perfect for family gatherings and will impress everyone at the table.


Ingredients

Scale
  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 cup red wine
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 bay leaves

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside.
  4. In the same pot, add onions and garlic, sauté until translucent.
  5. Stir in tomato paste, thyme, and rosemary.
  6. Add the red wine and scrape the bottom of the pot to deglaze.
  7. Return the beef to the pot and add beef broth, carrots, potatoes, and bay leaves.
  8. Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender.
  9. Season with salt and pepper to taste before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Feel free to add other vegetables like peas or green beans.
  • This stew can be made a day in advance for better flavor.
