Description
A healthy banana strawberry bread that is moist and delicious.
Ingredients

- 2 eggs
- 2 ripe bananas
- 80 g (1/3 cup) Greek yogurt
- 150 g (2 cups) oat flour
- 50 g (1/2 cup) almond flour
- 50 g (1/4 scant cup) maple syrup
- 1 ½ tsp baking powder
- 1 tsp vanilla extract
- 1/6 tsp salt
- 80 ml (1/3 cup) milk of choice
- 150 g (1 cup) fresh strawberries, diced
Instructions
- Preheat oven to 180°C (350°F). Line a 20 cm (7.9-inch) loaf pan with parchment paper or grease with oil.
- In a large bowl, mash the bananas until smooth. Stir in eggs, Greek yogurt, vanilla extract, and salt until well combined.
- Add oat flour, almond flour, and baking powder to the wet ingredients. Gradually mix in the milk until the batter is smooth.
- Gently fold in the diced strawberries. Pour the batter into the prepared loaf pan. Optionally, top with extra strawberries.
- Bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Make sure the bananas are ripe for best flavor.
- Store leftovers in an airtight container.
