Description

A healthy banana strawberry bread that is moist and delicious.


Ingredients

  • 2 eggs
  • 2 ripe bananas
  • 80 g (1/3 cup) Greek yogurt
  • 150 g (2 cups) oat flour
  • 50 g (1/2 cup) almond flour
  • 50 g (1/4 scant cup) maple syrup
  • 1 ½ tsp baking powder
  • 1 tsp vanilla extract
  • 1/6 tsp salt
  • 80 ml (1/3 cup) milk of choice
  • 150 g (1 cup) fresh strawberries, diced

Instructions

  1. Preheat oven to 180°C (350°F). Line a 20 cm (7.9-inch) loaf pan with parchment paper or grease with oil.
  2. In a large bowl, mash the bananas until smooth. Stir in eggs, Greek yogurt, vanilla extract, and salt until well combined.
  3. Add oat flour, almond flour, and baking powder to the wet ingredients. Gradually mix in the milk until the batter is smooth.
  4. Gently fold in the diced strawberries. Pour the batter into the prepared loaf pan. Optionally, top with extra strawberries.
  5. Bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the loaf cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Make sure the bananas are ripe for best flavor.
