Description
A freshly baked batch of Banana S’mores Muffins with melted chocolate chips, toasted marshmallows, and graham cracker crumbs. Perfect for any occasion!
Ingredients
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup sugar
1/4 cup brown sugar (packed)
2 ripe bananas, mashed
1/3 cup milk
1/4 cup vegetable oil
1 large egg
1 tsp vanilla extract
1/2 cup mini marshmallows
1/2 cup chocolate chips
1/4 cup graham cracker crumbs (plus extra for topping)
Instructions
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.
In a large bowl, mix dry ingredients: flour, baking soda, baking powder, salt, and cinnamon.
In a separate bowl, whisk together the sugar, brown sugar, mashed bananas, milk, oil, egg, and vanilla until smooth and combined.
Slowly add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
Fold in the marshmallows, chocolate chips, and graham cracker crumbs. This will give you that classic s’mores flavor!
Spoon the batter into the muffin cups, filling each about 3/4 full. Sprinkle a little extra graham cracker crumbs on top for a fun crunch.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean (a little melted chocolate is okay!).
Cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes:
These muffins are best enjoyed warm, with a gooey bit of marshmallow and melted chocolate.
You can add more marshmallows or chocolate chips on top before baking for extra indulgence!
Feel free to swap out the mini marshmallows for larger ones if you prefer.
