Ingredients
3 ripe bananas, mashed
1/2 cup shredded coconut
1/3 cup melted coconut oil
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
Instructions
Preheat Oven:
Preheat your oven to 350°F (175°C) and grease a loaf pan. Mix Wet Ingredients:
In a large bowl, combine mashed bananas, melted coconut oil, sugar, eggs, and vanilla extract. Mix until well combined. Combine Dry Ingredients:
In another bowl, whisk together flour, baking soda, and salt. Combine Mixtures:
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in shredded coconut. Bake:
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Cool and Serve:
Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
Tips:
Add chopped nuts for extra crunch!
For a tropical twist, include pineapple chunks.
