Ingredients

  • 1 lb salmon fillet, skinless
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 avocado
  • 1/4 cup Greek yogurt
  • 1 tbsp lime juice
  • 1/2 tsp cumin

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix salmon, breadcrumbs, parsley, egg, garlic, salt, and pepper.
  3. Form the mixture into small meatballs.
  4. Place meatballs on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until cooked through.
  6. For the sauce, blend avocado, Greek yogurt, lime juice, and cumin until smooth.
  7. Serve meatballs with the avocado sauce.
